Ever since reducing gluten from my daily diet I've been on the lookout for the right gluten free protein pancake mix, and recently I found one I love, A LOT. I drew my inspiration from this recipe; then altered it for my needs. Now it's the right gluten free protein pancake mix for my digestive system.

INGREDIENTS

125g Organic Buckwheat Flour
1 Serve Organic Vegan Protein
2 Organic Eggs
300g Organic Almond Milk
1tsp Organic Vanilla Extract
1-2 Drops doTERRA Cinnamon Essential Oil
1tsp Baking Powder
Pinch Himalayan Salt

METHOD

1. Mix the ingredients together
2. Slowly melt organic ghee in a cast iron fry pan
3. Cook ¼ cup of mixture per pancake
4. Serve with organic mixed berries, maple syrup + coyo vanilla bean
5. Serves 2-4

Pancakes are a must in my home and have been a weekly ritual in memory of my Mum. Sunday's just wouldn't be the same without them. My dogs would also agree as they love their pancake fix. They're spoilt, I know.
